2 cups of grated cucumber (1 large cucumber)
1 1/2 cups Kalona Supernatural Greek Yogurt
2 tablespoons Olive Oil
2 tablespoons dill
1 tablespoon lemon juice
1-2 minced garlic cloves
1/2 teaspoon kosher salt

salt, pepper to taste

Grate a whole cucumber, enough for 2 cups.

Squeeze the grated cucumber's juice out using your hands to remove as much excess liquid as possible.
Transfer to mixing bowl.

Add the yogurt, olive oil, dill, lemon juice, garlic, and salt.

Mix together and let sit for 5 minutes.
Add more lemon juice, salt, and pepper to taste.
If not serving right away, store in the fridge.
