Mushroom and Onion Chicken

  • 1-2 pounds chicken breast
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 4 oz sliced mushrooms
  • salt, pepper, and cumin, to taste
  • 1 small can cream of mushroom
  • onion powder, to taste

In a skillet, use 1 tablespoon of olive oil to cook and bring the chicken temperature to 165 degrees F.

While cooking chicken in the skillet, use a saute pan and the rest of the olive oil to cook the mushroom and onion. Season with salt, pepper, and cumin to taste.

In a small saucepan empty contents of the small can of cream of mushroom. If you want a thicker sauce then fill can up halfway with water and if you want a bit thinner sauce then fill can up all the way and add to the pan. Bring to a boil and simmer 5 to 10 minutes. Add onion powder to taste. 

To serve: slice the chicken and place on a plate, then add the mushroom and onion, followed by the mushroom and onion sauce. Bread is definitely recommended to be served alongside.
