Garlic Panko Crusted Rack of Lamb


Ingredients
  • 1 (4-7 bone) rack of lamb
  • 1/2 cup Panko bread crumbs
  • 1 tablespoon garlic powder
  • 2 teaspoon salt
  • 1 1/2 teaspoon black pepper
  • 4 tablespoons olive oil
  • 1 tablespoon Dijon mustard
Preparation
  • Preheat oven to 450 F
  • In a large bowl combine 1/2 cup bread crumbs, 1 tablespoon garlic, 1 teaspoon salt, 1/2 teaspoon black pepper and 2 tablespoons olive oil. Set aside.
  • Season lamb with remaining salt and pepper on both sides
  • Heat 2 tablespoons olive oil over med-hi heat 
  • Sear lamb rack on each side for 2 minutes
  • Brush lamb on each side with the Dijon mustard
  • Roll in bread crumb until evenly coated
  • To prevent charring cover rack bones with foil during the cooking process



  • Roast the lamb in preheated oven for 12 to 18 minutes depending on how done you want it
  • Let rest 5 minutes before carving



Bloody Rare: 115 to 125 F
Rare: 125 to 130 F
Medium Rare: 130 to 140 F
Medium: 140 to 150 F
