Ingredients
- 1 (4-7 bone) rack of lamb
- 1/2 cup Panko bread crumbs
- 1 tablespoon garlic powder
- 2 teaspoon salt
- 1 1/2 teaspoon black pepper
- 4 tablespoons olive oil
- 1 tablespoon Dijon mustard
Preparation
- Preheat oven to 450 F
- In a large bowl combine 1/2 cup bread crumbs, 1 tablespoon garlic, 1 teaspoon salt, 1/2 teaspoon black pepper and 2 tablespoons olive oil. Set aside.
- Season lamb with remaining salt and pepper on both sides
- Heat 2 tablespoons olive oil over med-hi heat
- Sear lamb rack on each side for 2 minutes
- Brush lamb on each side with the Dijon mustard
- Roll in bread crumb until evenly coated
- To prevent charring cover rack bones with foil during the cooking process
