Pulled Pork Loaded Baked Potatoes

Potatoes are a staple in our household and we are always trying to come up with new dishes using them. Using one of our previous posts featuring Slow Cooked Pulled Pork we created this delicious recipe to complement it.


Ingredients
  • 6 russet potaotes
  • olive oil
  • salt and pepper
  • 2 cups pulled pork
  • shredded cheese
  • butter
  • chives
  • bacon bits
  • sour cream
Preparation
  • Preheat oven to 350 degrees F
  • Wash and scrub potatoes
  • Poke holes all over potatoes using a fork
  • Coat lightly with olive oil and season with salt
  • Place directly on rack and cook for 1 hour to 1 hour 15 minutes, until skin is desired crispness and center is soft
  • Take potatoes out of the oven and let cool for a moment
  • Bore out top half of potatoes and place into a bowl
  • Use a tablespoon or two of butter with salt and pepper to mix together the scooped out potato mixture 
  • Fold in the pulled pork
  • Place a small amount of sour cream into the potato bowls
  • Place the potato and pork mixture back into the hollowed out potatoes
  • Top with shredded cheese, chives and/or bacon bits and place back into oven until the cheese is thoroughly melted
  • Serve immediately with more sour cream if desired
