Shortbread Bars

Today I made some shortbread bars! I really love the simplicity and flavors of a shortbread cookie and wanted to try something new- I added almond flour to the recipe for the more "sandy" texture of a shortbread.


  • 2 cups softened butter
  • 1 cup white sugar
  • 2 cup All Purpose (wheat) flour
  • 1 cup almond flour
  • 2 teaspoons salt


  • Cream the butter and sugar together, add the salt and mix well. Combine the flours together and add into the cream mixture; mix until a dough forms. Knead the dough lightly until it forms and wrap in plastic film to chill for at least 45 minutes. 

  • Roll out the dough into a sheet pan, about 1/2 inch thick, and dock the dough with a fork. Bake in a 300F oven for about 45 minutes. Take out of the oven and cut the cookies into square bars or desired shape, allow to cool. Once cooled I coated half of my bars with an easy lemon icing made from lemon juice, lemon zest, and powdered sugar.
