- 2 cups softened butter
- 1 cup white sugar
- 2 cup All Purpose (wheat) flour
- 1 cup almond flour
- 2 teaspoons salt
- Cream the butter and sugar together, add the salt and mix well. Combine the flours together and add into the cream mixture; mix until a dough forms. Knead the dough lightly until it forms and wrap in plastic film to chill for at least 45 minutes.
- Roll out the dough into a sheet pan, about 1/2 inch thick, and dock the dough with a fork. Bake in a 300F oven for about 45 minutes. Take out of the oven and cut the cookies into square bars or desired shape, allow to cool. Once cooled I coated half of my bars with an easy lemon icing made from lemon juice, lemon zest, and powdered sugar.
