2 cups grated cucumbers
1 1/2 cups plain Greek yogurt
2 tbsp olive oil
2 tbsp dill
1 tbsp lemon juice
1 medium clove garlic
1/2 tsp fine sea salt
Grate a whole large cucumber, enough for 2 cups.
Squeeze the grated cucumber's juice out using your hands
to remove as much excess moisture as possible.
Transfer to serving bowl.
Add the yogurt, olive oil, dill, lemon juice, garlic and salt.
Mix together and let sit for 5 minutes.
Add more lemon juice or salt to taste.
If not serving right away put it in the fridge and pull out when ready to eat. Can last in the fridge properly covered for 3-4 days.
