1 lb Boneless Skinless Chicken Breasts
1 tbsp Olive Oil
Fresh Ground Pepper
1/4 cup balsamic vinegar
2 cloves garlic, chopped
1 pint grape tomatoes, halved
2 tbsp basil, fresh is best
Use a large skillet on medium heat.
Salt - pepper chicken and cook all the way through.
Once the chicken reaches 165 degrees F, set aside, covered.
Add the balsamic vinegar into a wide-based pan and cook garlic for a minute on medium-low heat.
Add the tomatoes and let simmer for 6 minutes.
Once the tomatoes become soft add the basil.
Add the cooked chicken in to the mixture.
Place the mozzarella cheese on top of the chicken and put the lid on until melted.
Remove the lid and spoon the tomato mixture on top of the melted cheese.
Serve with a dash of salt and pepper to taste.
