Mushroom and Zucchini Quinoa Bowl




Ingredients

1 cup quinoa
2 cups water
1 cup sliced mushrooms
1 whole zucchini
1-2 cups chopped kale
Olive Oil
Sea Salt

Preparation

Boil quinoa in 2 cups of water until almost all of the water is gone. 
Cover and leave on burner turned off for about 10 minutes.
If you season with garlic powder during cooking process it will cut away some of the bitterness of the quinoa. 
Saute the mushrooms, kale and zucchini in a tbsp of olive oil.
Serve quinoa and put the vegetables on top.
