Banana Chocolate Chip Cookies


1/2 cup softened butter
1 cup dark brown sugar
1/4 cup white sugar
2 over-ripe bananas, mashed
1 tsp vanilla extract
1 tsp almond extract
2 cups all purpose flour
1 Tbsp corn starch
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt (I used Himalayan salt)
12 oz chocolate chips


In a mixing bowl, cream the butter and sugars.

Add extracts and mix until combined.
Add half the flour and the corn starch,

baking soda, baking powder and salt.

Mix until barely combined and

add the remaining dry ingredients.

Fold in the chocolate chips until
evenly distributed.

Bake in a 375 degree F oven
for 10-15 minutes.
Cool on the tray for 5 minutes before
transferring to a rack.

Add nuts or chopped candy for different textures and flavors. 
We used semi-sweet chocolate chips, but dark chocolate would make these cookies deliciously rich!
