Jalapeno Cornbread


Ingredients

1 package of Bob's Red Mill Gluten Free Cornbread Mix
1 1/2 cups milk
2 eggs
1/2 cup melted butter
3 jalapenos



Preparation

Have all ingredients at room temperature. Preheat oven to 375 degrees Fahrenheit. Generously grease a 9x9 pan. (I used my cast iron skillet)
Slice and dice your jalapenos. (I would suggest using gloves while handling any kind of chili peppers)
Place cornbread mix in a large bowl. Add milk, eggs and butter. Mix until blended, then mix vigorously for 30 seconds more.
Pour diced jalapenos and use a spatula to fold the peppers into your cornbread mix.
Pour batter into prepared baking pan. (or cast iron skillet) Bake until golden brown, about 25 minutes.
